Hamish Ingham will return in 2019 as Executive Chef for the Airnorth Cable Beach Polo DINNER UNDER THE STARS to delight guests with his intimate knowledge of modern cuisine in a three-course meal on the sands of Cable Beach.
Hamish’s accolades continue to role in. This week his restaurant Banksii, in Barangaroo on Sydney Harbour, was awarded a Chef’s Hat in the prestigious Australian Good Food Guide 2019 Awards.
A quiet achiever in the Sydney restaurant scene since becoming the head chef for Billy Kwong in the year 2000, Hamish won the prestigious Josephine Pignolet Young Chef of the Year Award in 2004 and headed to the United States where he worked at Alice Water’s seminal Chez Panisse.f
Creating daily menus inspired by local, organic, seasonal produce at Chez Panisse has influenced Ingham’s cooking ever since. A dish cooked by Hamish is always generous & honest. Unafraid of flavour, he is often bold in his application of it, however it is the lightness, harmony & balance that is the hallmark of an ‘Ingham’ dish.
